Molecular gastronomy.
A recipe taken out of ultra-hip NY chef David Chang’s new magazine Lucky Peach (one of his restaurants is called Ma Peche, meaning, wait for it: lucky peach) for alkaline noodles. Of course, he got the idea from ultra-hip molecular gastronomy guru Harold McGee. The key step is taking baking soda (sodium bicarbonate, NaHCO3) and baking it to turn it into sodium carbonate (we can balance the equation if we want to be anal about it: 2NaHCO3 -> Na2CO3 + CO2 + H2O … god I wish I could make subscripts here). Apparently it makes the noodles tough, chewy and ramen-like.

The slow-motion disaster of the food crisis in the Horn of Africa is truly horrifying. Last Wednesday the United Nations declared a famine in two large regions of Somalia; 3.7 million people, nearly half the country’s population, are affected. The crisis is larger than just Somalia. Right now the devastating drought in the region means that more than 11 million people need food aid across Kenya, Somalia and Ethiopia.
